Description

'Went' to allrecipes.com today for a tuna-melt sandwich recipe. Found only one . Tried it. Improved upon it. Here is the alternative 'Better' version of mine for your palate:

TUNAMELT WITH MUSHROOMS

Ingredients
• 1 (6 ounce) can albacore tuna, drained
• 1/4 cup finely chopped celery
• 1/4 cup chopped BROWNED WHITE onion
• 2 tablespoons mayonnaise
• 1 tablespoon lemon juice
• 1/2 teaspoon curry powder, or to taste
• 4 SLICES OF RYE BREAD, toasted and buttered
• 4 THIK slices OF LOW FAT Cheddar cheese
• 8-12 THIN SLICES OF SALTY PICKLES
• ½ CUP BROWNED THINLY SLICED PORTABELLA OR CRIMINI MUSHROOMS
• ½ CUP OR FINELY SLICED RED PEPPERS (OPTIONAL)
• WHEN WANT A LARGER MEAL PLACE A PORTION OF 1 SUNNY SIDE UP EGG ON TOP BEFORE SERVING (OPTIONAL)
Directions
1. Preheat the oven's broiler.
2. In a medium bowl, stir together the tuna, celery, mayonnaise, lemon juice and curry powder. Spoon equal amounts onto each 2 BREAD HALVES, and top with a slice of cheese, MUSHROOMS AND PICKLES. Place the sandwiches on a baking sheet.
3. Broil for 2 to 3 minutes, or until cheese is melted and toasty. Serve hot.
